RAW CHOCOLATE TRUFFLES
Ingredients:
1 cup almonds
1/2 cup of shredded coconut
3 tbsp goji berries
5 tbsp raw cacao powder
3 tbsp cocoa nibs
4 tbsp coconut oil melted
3 tbsp agave nectar
1/2 tsp vanilla powder
Directions:
Put the almonds into a food processor and pulse till crumbly. Add the remainder of the ingredients and whiz till everything binds together. Roll into balls and refrigerate to set. Keep in the fridge.
I usualy make a double batch of these. They are so delicious, I dare you to stop at one!
CHOC, COCOA NIB BALLS
Ingredients:
1 cup raw almonds
1 cup desiccated coconut
2 tbsp raw cocoa powder
1 tbsp cocoa nibs
3 tbsp maple syrup
3 tbsp coconut oil
1 tsp vanilla powder
Directions:
1. Put almonds and coconut into the
food processor, pulse till it is crumbled
2. Add the remainder of the ingredients and blend till smooth or crunchy to your liking. Taste to see if they need more sweetner, or coconut oil if they need more moisture to bind
3. Roll into balls and refrigerate.
PEANUT BUTTER BALLS
Ingredients:
1 cup of peanut butter
1 tsp sea salt
2 tbsp raw honey
1/2 cup of LSA mix.
Directions:
Add all of the ingredients to a bowl and mix together well. Taste to see if you need to add more sea salt or sweetener. The mixture should be the consistency of to play dough. if not add more peanut butter or LSA. Roll into balls and keep refrigerated.
Tip;
Try to purchase your peanut butter from the health food store as it only contains peanuts, not palm oil or preservatives.
NUT FREE BANANA BALLS
Ingredients:
1/3 cup puffed millet
1/3 cup desiccated coconut
1 tbsp coconut oil
5 dates pitted
5 dried apricots
1 ripe banana
1/3 cup sunflower seeds
1 tsp vanilla powder
Directions:
1. Put the millet, sunflower seeds and coconut into a food processor and pulse till they become a crumble.
2. Add the rest of the ingredients and blend.
3. Roll into balls and refrigerate.
VANILLA ALMOND BALLS
Ingredients:
1 cup raw almonds
1 cup desiccated coconut
3 tbsp coconut oil
3 tbsp maple syrup
1 tsp vanilla powder
Directions:
1. Put the almonds and coconut into a food processor and pulse till they become a crumble.
2. Add the rest of the ingredients and blend.
3. Roll into balls and refrigerate.
LEMON CASHEW BALLS
Ingredients:
1 cup raw cashews
1 cup desiccated coconut
zest of one large lemon
2 tbsp maple syrup
pinch of sea salt
1 tbsp coconut oil
Directions:
1. Put cashews and coconut into the
blender and pulse till it is crumbled
2. Add the remainder of the ingredients and blend till smooth or crunchy to your liking. Taste to see if they need more sweetner, salt, lemon zest (if you like more tang) or coconut oil if they need more moisture to bind
3. Roll into balls and refrigerate.
To me they taste like white chocolate! Make a double batch and freeze if you love them.
SUPER GREENS BLISS BALLS
(nut free)
Ingredients:
1/2 cup pumpkin seeds
1/3 cup dates
3/4 cup shredded coconut
1/2 cup coconut oil
1/2 cup raw honey
1 tsp turmeric powder
1 tsp super greens or spirulina
Pinch of all of these- sea salt, cinnamon
and nutmeg
Directions:
1. Put all the dry ingredients into a food processor and blend well.
2. Add the remainder of the wet ingredients and blend to your liking.
3. Roll into balls and refrigerate.
